Great week!

Aww... Wednesday we went to Sauvie's Island to swim in the yuckie river but, had a great time! I swam out in the river, we played volleyball, fun fun fun. Today we went to the last Last Thursday event of the year-the Alberta monthly street fair. AND I cut off my hair!!! Yay!

Today

I'm spending today and tomorrow applying applying applying, 6 hours a day. I'm up to 72 ish applications I think, I need to re-count. I feel awfully pro at the online app at this point. I could professionally critique online applications. Some are just dumb. I'm just going down a list of hospitals in California and double checking that I've pretty much applied for every potential position there is. When my list runs out I'll be looking at Colorado and yes family, Hawaii is still on my list. :-P Friday night I'll probably be ready to jump off a bridge.

GFCFEFSF Enchiladas! Again!

(Gluten free, casein free, egg free, soy free) So I made enchiladas again. Very tasty, I took them to Gram's for Friday night dinner. Here's the recipe. This time I added 3 gloves of garlic, one yellow onion, and one jalapeno. I think it could have twice as much of all those things and it would probably be safe to go up to 3 jalepenos depending on how much you're making. This round I made 3 big pans (48 enchiladas).

I baked all three pans, let one cool, and put it in individual servings and then in the freezer. We'll see how that goes. I had a hard time deciding if I should still bake it and I think that it will hold up better with freezing/thawing.

I will also say that the assembly line is challenging with one person. This time I warmed up all the tortillas and kept them in a tortilla warmer. Then I moved on to the dipping and filling. Tongs are a key ingredient here to prevent finger scalding and I never feel like there is enough sauce. I would use at least 1.5 cups of the water from the boiled tomatillos to spread the sauce out, maybe 2+cups. It gets chunky and I always want more.

Very delicious. I serve with chopped iceberg lettuce, tomato, avocado and I REALLY like the squirt of lime on top of it all.

Green Soup and AWESOME ALLERGY-FREE FINDS!

Due to a 4-day stomach ache I decided to make Green Soup. It's the recipe from my mom's friend, Linda. It's a very alkaline, cleansing, nutritious soup.
Recipe:
4 zucchini (from a garden-we have lots)
1 head? of celery
1 bunch of parsley
2 BIG handfuls of green beans

Snap the ends of the beands, chop the veggies and cover with just enough water (not too much!). Let boil and cook for about 30 min. Remove from heat and immersion blend! or whatever you have. Eat with black pepper. I was also thinking about yellow onion and Gramma recommended garlic. You can spice it up or not. Black pepper and onions help with inflammation so those are recommended for the allergy-free cleansing.

Are you as excited at I am?!!! YAY! Mom and I finally stopped AT Bob's Red Mill-the big red building on 224 that we drive by all the time. And it was INCREDIBLE, a truly life-changing experience. Everyone should go there and I when I say everyone I especially mean folks with allergies. They have a cafe that serves vegan GF options. I picked up this amazing loaf of vegan GF bread that rocks. I wanna buy like 10 loaves. It is MUCH better than the other Whole Foods options I have tried. I had toast for breakfast and CB&J for lunch! I also bought a GF vanilla cake mix, polenta, buckwheat flour, and a REALLY cool magazine called Living Without. PLEASE check this out my allergy-free friends, it will definitely be worth your time. BAM! CB & J never tasted so GOOD!

IT'S DONE!!!

Many who have been around me the past year have noticed the large bag of yarn I frequently carried around. After starting this masterpiece in August of 2009, with intentions of gifting it to my Goddaughter Debra for Christmas, I have finally finished it. Just in time to be 3 weeks late for her birthday. What can I say, I'm a rockin Godmom.

This is the diagonal box stitch my cousin Alex taught me two-ish years ago. I will admit I had many a time when I had to take out whole rows for totally messing it up. I crocheted it out of a plastic bag while waiting at airports. It kept me warm through the winter while working on it. It has seen many travels as I lugged it around to work on. Geez. It's done!

Update

So this is a picture of the wheat bread I baked last week. I've slowly been feeling sick again so I'm going to go back to gluten-free. No tummy aches please!

Thursday was my housemates' wedding, Marie and Ivan. The event was at Laurelhurst Park in Portland. I was a set up-er, caterer, server, tear down-er, and photographer.

Enchiladas!

Mmm, so my hairdresser who is a 7 year food allergy person, introduced the best thing of my life, cheese. Daiya cheese is pretty much the most amazing vegan cheese ever, only found at whole foods for $9 of course. I opened the bag and it smelled like cheese, not some soy crap. It's made with flours and oils and it's amazing. Mom and I whipped it up and I fed it to my family and even my sister didn't catch on. I'm so proud. We made chicken verde enchiladas. With everything on it (accept chilies because of the allergies)






I kind of made up the recipe after lightly perusing the net.
15-25 corn tortillas
2 bags of Daiya vegan cheese mmmmm!
1 bunch of cilantro
2 cups chopped, cooked chicken
1/2 can black beans
1/2 can corn
1.5-2 lb of tomatillos, husks removed and rinsed
1 tsp cumin
Salt and Pepper
Iceberg lettuce, tomato, onion, garlic, etc.

1) Put the tomatillos in a pan, cover with water and bring to boil. Turn down heat and let simmer for 5 min. Drain and put into food processor agent. Pulse until it's goo.
2) Add 1/4c cilantro, salt, and about 1 cup of the boiled water
3) Put the cooked chicken, beans, and corn in a bowl and add cumin and whatever else you like.
4) Heat a pan with a little oil and heat up the tortillas until soft (not burnt).
5) Pour the processed sauce into another pan (or same) and let heat and simmer.
6) With tongs, dip the warm tortillas in the sauce on both sides. Carefully fill with chicken mixture, sprinkle with cheese and roll up in a 9x13ish dish. Repeat x 25.
7) Top with cheese and the leftover sauce (we ran out so I beefed up the recipe).
8) You could potentially eat it at this point, it's all warm. We put it in the oven at 350 for 20 min. to goo and melt the cheese.
